Citrus Honey Mallard Duck

Recipe Ingredients:
1 Mallard Duck
Salt and freshly ground black pepper
2 tbls. honey
Finely grated rind and juice of 1/2 lime
Extra lime slices
Fresh watercress to serve

Prick the mallard all over with a fork. Season inside and out. Place on a rack in a roasting pan, in a preheated oven 400F. degrees for 45 minutes. Meanwhile blend together the honey and lime rind and juice. Arrange the lime slices on top of the mallard, spoon over most of the glaze and cook for a further 15 minutes. Serve on a bed of watercress with the remaining glaze poured over.
