Deviled Eggs Mardi Gras

Recipe Ingredients:
6-8 hard boiled eggs
1 1/2 Tbsp. red onion, minced
4 pimento stuffed olives, patted dry and minced
zest of 1/2 fresh lemon
1 Tbsp. wasabi powder
pinch of salt
1/4 tsp. cayenne pepper
3 Tbsp. mayonnaise
chives for garnish

Preparation:
Hard boil eggs. Split in half. Carefully separate yolks from whites leaving whites intact. In a medium bowl combine the onion, olive, wasabi, cayenne, lemon zest, egg yolks, salt and mayonnaise. Blend until smooth. Scoop mixture into individual egg whites. Garnish with chives.
