Creamy Cucumber Yoghurt Dip

Recipe Ingredients:
1 cucumber, peeled, seeded and finely chopped
1/4 cup chopped fresh chives, divided
1 8 oz package cream cheese, softened
1/4 cup plain yogurt
1 tbsp fresh lemon juice
1 1/2 tsp dried mint leaves
freshly ground black pepper

Lightly salt cucumber in a small bowl and toss.Refrigerate for 1 hour. Drain cucumber, dry on paper towels.
Set aside. Reserve 1 tbsp chives for garnish.
Place remaining 3 tbsp chives, cream cheese, yogurt, lemon juice , mint and pepper in a food processor or blender. Process until smooth. Stir in cucumber. Cover and refrigerate for 1 hour. Sprinkle reserved chives over top.
