Peach Cobbler

Recipe Ingredients:
Filling:
3 cups sliced peaches
1 cup sugar
1/4 teaspoon almond extract
1 tablespoon lemon juice

Shortcake Dough:
1-1/2 cups flour
1/2 teaspoon salt
3 teaspoons baking powder
3 tablespoons sugar
1/3 cup shortening
1/2 cup milk
1 egg, well beaten

Preparation:
Preheat oven to 400°. Arrange peaches in a greased 8-inch square baking pan. Sprinkle with sugar, extract, lemon juice, salt baking powder, and 1 tablespoon sugar. Heat in oven while preparing shortcake. Stir together flour, salt, baking powder, and 1 tablespoon sugar. Cut in shortening until mixture is like coarse crumbs. Add milk and egg at once; stir just until flour is moistened. Spread dough over hot peaches. Sprinkle with the remaining 2 tablespoons sugar. Bake for 35 to 40 minutes. More sugar can be used in shortcake dough, if desired. Serves 8-10.
