Sausage & Pepper Sandwich

Recipe Ingredients:
1 pound of fresh Italian sausage links (sweet, mild or hot)
½ cup of water
1 tablespoon of olive oil
1 medium green pepper sliced thin
1 medium red pepper sliced thin
1 large onion sliced
½ teaspoon dried oregano
½ tablespoon chopped fresh basil or ½ teaspoon of dried basil
4 French style or hoagie rolls split and roasted

Brown sausages in a large heavy skillet over medium heat for approx. 5 minutes. Add water and bring to a boil. Cover & lower heat and simmer until almost done, about ten more minutes. Drain on paper towels.

If pan is dry add some olive oil, increase heat and add bell peppers, onion, oregano and basil. Cook until veggies are crisp, about five minutes. Return sausage to pan and heat through.

To serve - hollow out some of the dough to form a bed for the sausage. Top with veggies and serve.
